Coffee Brewing Best Practices and Guidelines

Tips for all types of coffee

  1. Use fresh filtered water.
  2. Preheat your carafe or cup.
  3. Choose organic and Fairtrade certified beans.
  4. Grind beans just prior to brewing.
  5. Rinse paper filters with hot water before adding grinds.
  6. Follow the suggested guidelines below for your specific brewing technique but adjust coffee to water ratio that meets your personal taste preferences.

Pour-over coffee (Hario V-60, Chemex, etc.)

  1. Boil fresh water in a kettle and let cool to 96 degrees
  2. Get filter ready, place the filter into the pour over and pour hot water into it until evenly saturated then discard the water
  3. Put slightly coarse ground coffee into the filter (2 tbsp for every cup of water used) and smooth the top for even water distribution
  4. Pour a little bit of boiled water onto the coffee grounds and wait to allow the grounds to bloom
  5. Slowly pour the remaining water in a circular motion to keep the grounds just covered until all the water is used evenly distributing the water over the grinds.
  6. Once all of the water is done dripping out of the filter your coffee is ready to enjoy

French press (Bodum)

  1. Boil fresh water in a kettle
  2. Pour some of the boiled water in to your French press swirl the water around and discard
  3. Add coarse ground coffee (2 tbsp for every cup of water used) to your French press
  4. Pour boiled water over your coffee grounds, stir the water into the grounds, place the plunger onto your French press and wait 4-5 minutes for the coffee to brew
  5. Use even pressure to push the plunger down to the bottom of your French press
  6. Leaving the plunger pushed all the way down you can pour out your coffee and enjoy

Aeropress

 

  1. Boil fresh water in a kettle
  2. Place a filter into the filter cap and attach it to your Aeropress
  3. Place the Aeropress onto a mug, pour some hot water through the Aeropress and discard the water that comes through (disregard this step if using a Fellow Prismo or similar aftermarket cap)
  4. Add a level Scoop of medium/fine ground coffee to the inside of the Aeropress and smooth out the grounds for an even distribution of water
  5. Pour boiled water over the grounds until the water reaches the number 4 mark on the outside of your Aeropress
  6. Once the water is added, stir the water and coffee grounds together and let sit for 30 seconds
  7. Put the plunger on the top of your Aeropress and slowly but firmly push the plunger all the way to the bottom
  8. Remove the Aeropress from your mug, top up with additional water if needed and enjoy your coffee
  9. Remove cap from Aeropress and pop grinds into your compost bucket

Moka Pot

  1. Boil fresh water
  2. Use a fine ground coffee
  3. Add boiled water to just below the release valve in the bottom of your moka pot
  4. Put your ground coffee into the filter and smooth out the grounds without packing them down
  5. Place the filter back into the bottom of your moka pot making sure there are no grounds where the moka pot screws together
    Place the top of the moka pot back onto the base and screw them together
  6. Place the moka pot with the lid open onto the stove and turn the stove to a medium low heat
  7. Leave the moka pot on the stove for 5-10 minutes until the coffee starts flowing to the top through the pipe, reduce the heat and wait for a puffing sound; once you hear this the coffee is done brewing
  8. Remove the moka pot from the heat, close the lid and wrap a cold towel around the base or run it under cold water to stop the coffee from brewing further and developing a bitter taste
  9. Pour the coffee into a mug once it stops bubbling out of the pipe

Cold Brew

 

  1. Use coarse ground coffee in a four to one water to coffee ratio
  2. Add the coffee grounds into the bottom of a French press (or glass Jar)
    Add fresh cold water on top of the coffee grounds until completely saturated
  3. Cover and place the French press/jar in the fridge for 12 to 14 hours
  4. Once done brewing in the fridge push the plunger down like you normally would with a French press or pour contents from jar through a filter, pour a cup of cold brew and enjoy

Automatic Drip Brewer

  1. Add fresh cold filtered water to your coffee maker
  2. Put the filter in filter basket, rinse with water and then add coffee grounds (2 tbsp for every cup of water used)
  3. Turn on your coffee maker and let the coffee brew
  4. Once done brewing swirl the pot, pour yourself a cup of coffee and enjoy

Espresso

 

  1. Turn your espresso machine on and run a shot of water through the portafilter to rinse it out
  2. Use a fine ground espresso bean (18-21 grams for every shot) and grind it into your portafilter
  3. Using a firm and even press tamp the coffee grounds into the portafilter, then gently twist the tamper to polish the grounds and make sure they are level – an uneven tamp will lead to an improper extraction
  4. Lock the portafilter into your machine and place an espresso cup under it
  5. Run the espresso machine for 30 seconds to pull an espresso shot, once the 30 seconds is over you have a fresh shot of espresso to enjoy
  6. Do not forget to remove your portafilter and rinse the group-head after your pulled your shot
